Are we working on real iOS devices ?

Yes its possible, we have a server argument as iosDeviceType=real this will only consider real devices and skip simulators

Quick question, do you need to specify the device id in your capabilities when using real iOS device setup in the farm, or does the plugin chose any device itself?
Is iosDeviceType=real argument what helps here?

The plugin picks random available device that is free. You dont need to set any udid capability.

iosDeviceType=real will only consider real devices and ignore simulators from the machine.
