Switch to Vuetify virtual data tables

Virtual data tables are now supported by Vuetify.

It seems like they are a drop-in replacement for the paginated data-tables, but after experimentation they feel "slow". With new blocks of rows loading after what feels like a solid second. We heavily use templating for this component, so I think we can make this component more responsive by changing this.
