Consolidate release versioning

The version numbers in https://github.com/movingpandas/mobiml/tags should be increasing.

Check if the version in https://github.com/movingpandas/mobiml/blob/main/uv.lock should be synced with the release version numbers.

I have deleted the 0.1 tag since it was identical with v0.0.1
