Can we start a program and simply pipe stdout to lnav? I can't seem to find a documentation for it

Our applications don't write logs to file. They only write to stdout. I can't seem to find a documentation on whether lnav supports reading logs from stdout.

Yes.
The easiest thing is to just try, for example:

$ journalctl | lnav    

and then pressing q:

ⓘ info: 38.4MB of data from stdin was captured and will be saved for one day.  You can reopen it by running:
   lnav piper://p-54debc9e53ce3a287a7268a4d36e05f7-000

Alternatively you can use -e option documented like this:

-e <command-line>
Execute the given shell command-line and display its output. This is equivalent to executing the :sh command and passing the -N flag. This option can be given multiple times.
