Version string in docs is wrong

It says v(uutils coreutils) 0.0.30 but we only need to say v0.0.30 or something like that. This might also be a good moment to think about whether we want to show the version in some other way, because it's not really tied to the util, but to the whole coreutils package.

Note that we can't just delete (uutils coreutils) from the version string to fix this because that was done intentionally here: #7441
